Red cabbage

Red cabbage “Purple cabbage”, in Iran “Kalam Qermez” is a type of leafy vegetable that grows in the Maghreb, Iran, China, the Americas and Europe. Its leaf is tough compared to other types of cabbage.

A seasonal plant is planted in the spring and harvested in late autumn. It is used in cooking and preparing salads, and to maintain its dark red or purple color, vinegar or one of the citrus fruits must be added to the same bowl, and it is used as a kind of pickles.
